    1lb of pancetta. This is a classic pancetta piato (flat) as apposed to rolled. We keep it simple with black pepper, a hint of juniper and coriander. Aged for just shy of 3 months and ripe with melt in your mouth fat. Perfect for pasta carbonara, amatriciana or one of my favorites is thinly sliced on toast!
